Homemade Raisin Banana Muffins
Summer is almost over and what better way to adjust to the cooler weather with a delicious recipe. Homemade Raisin Banana Muffins will be sure to warm up your stomach with a good cup of coffee. Kids will enjoy these healthy muffins with a glass of milk during snack time at home or at school.
Ingredients
3 ripe banana’s, mashed
¾ C. brown sugar
½ C. butter, softened to room temperature
2 eggs
2 C. flour
¼ tsp. salt
1 tsp. baking soda
1 C. raisins
Directions
#1. Preheat the oven to 350 degrees. Lightly grease your muffin tins or use silicone baking cups.
#2. In a medium size bowl, mash the ripe banana’s using a fork or a potato masher. Stir in the sugar, butter and eggs. Mix well.
#3. In a separate bowl, combine the flour, salt, and baking soda. Fold the dry ingredients into the wet ingredients and mix well.
#4. Add in the 1 cup of raisins.
#5. Bake 16-19 minutes. The muffins will turn golden brown in color.
*Makes approximately 16 average size muffins. Store in an airtight container up to 1 week or in the freezer 1-2 months.
