Saint Patrick’s Day Shamrock Cupcakes
It’s time for some for fun St. Patrick’s Day themed cupcakes! Everyone one loves cupcakes because they are so easy to dress up for festive vacations. The green base of the Shamrock Cupcakes is easy-to-make an adapted from a simple cake recipe I found on the internet. To complete the look the vanilla frosting on top is complemented with a green chocolate shamrock.
Cupcake Base/Batter Ingredients
1/2 C. butter, softened to room temperature
1 C. sugar
2 large egg whites
2 tsp. vanilla extract
2 tsp baking powder
1 1/2 C. flour
1/2 tsp. salt
3/4 C. milk
3-4 drops of green food coloring
Directions
Preheat the oven to 375 degrees.
Combine the softened butter, sugar, egg whites and vanilla mixing well. Slowly fold in the flour, salt and baking powder.
Add the milk continuing to stir and lastly add a few drops of the green food coloring mixing well.
Pour into greased muffin tins (or liners) and bake 20-25 minutes.
Insert a toothpick around 20 minutes and if it comes out clean the cupcakes are done.
*Makes approximately 12 cupcakes
Shamrock Cupcake Materials
12 oz Wilton green chocolate candy melts
small sandwich baggie
kitchen scissors
white frosting, any brand
Shamrock Directions
Pour the green candy melts into a microwavable safe dish. Heat in the microwave in 20-30 second increments, stirring frequently. Remove from the microwave once melted and set aside to cool a few minutes.
Line a baking sheet with parchment paper or foil.
Scoop the melted green chocolate into the small sandwich baggie and snip the corner of the bag.
Gently squeeze the green chocolate out of the bag onto the baking sheet.
To make the Shamrocks
Make 3 small circles and fill into with chocolate.
Make a small stem.
Repeat until you have at least 12 Shamrocks, plus a few extra, about 2″ in size
Place the baking sheet in the fridge to set for 20-30 minutes.
Decorating the Cupcakes
Generously frosting each green cupcake with white frosting and set aside.
Gently remove each chocolate shamrock from the baking sheet and place
one on top of each cupcake.
Repeat with all the cupcakes.
