Looking for a healthy, but yummy recipe to make for the family? Try these delicious Cranberry Apple Oatmeal Muffins! The muffins are healthier than the average muffin because of the addition of oatmeal and are super easy to make.
Ingredients
2 cups Flour
1 cup Rolled Oats
¾ cup Sugar
1 ½ tsp Baking Powder
½ tsp Baking Soda
½ tsp Salt
2 tsp Cinnamon
2 Eggs
1 cup Milk
½ cup Butter, melted
2 Apples, grated
1 cup Cranberries, chopped
Directions
Preheat oven to 400 degrees.
1. Line muffin pan with cupcake liners and set aside.
2. In a large bowl combine flour, oats, sugar, baking powder, baking soda, salt and cinnamon. Mix until well incorporated.
3. In a medium size bowl, beat eggs. Add milk, butter and grated apples. Stir, until evenly coated.
4. Pour egg, milk and apple mixture into the bowl with dry ingredients. Stir for about a minute, until mixture is well combined.
5. Add chopped cranberries and stir a little more, just enough to incorporate.
6. Spoon batter into lined muffin pan, filling to the top.
7. Bake for 20-25 minutes.
8. Let cool on wire rack.
Yields about 12 muffins.

Oh I love cranberries in muffins. In order to make this vegan and cruelty-free, because I love animals … I would substitute coconut milk for the dairy milk, and applesauce or banana for the egg. Then I could really enjoy these with a clear conscience. Thank you 🙂
can I substitute sugar with agave or honey for muffins
With 1/2 cup of butter, I wouldn’t really label these “healthy”
Made these for breakfast this morning. So delishous! I used 1/2 cup of sugar instead of 3/4 and used 3 apples instead of 2. So yummy and easy, can’t wait to make again!
2nd time making these. Family likes them a lot! Using some leftover breakfast oatmeal this time around and cutting dry oatmeal down to compensate. Also, using dried cranberries instead of fresh.
There’s nothing very healthy about these muffins! No doubt they taste delicious, but with all that wheat flour, granulated white sugar, and butter, they can’t be considered “healthy.”
I substituted coconut oil for butter and apple sauce with a splash of maple syrup instead of sugar. Cut down some of the milk due to the added liquid. Turned out great!
