Halloween Jack-O-Lantern Pumpkin Cupcakes
Get ready for some baking fun with these cute Jack-O-Lantern pumpkin cupcakes. These cupcakes are perfect for Halloween and are a great treat for children to bring to school on the festive day.
Ingredients
½ C. butter, softened to room temperature
2 eggs
1 C. milk
1 tsp. white vinegar
1 ½ C. flour
1 C. sugar
1 tsp. baking soda
1 tsp. salt
1/3 C. cocoa powder
Other products needed
12 oz. bag Wilton black candy melts
small sandwich baggie
6 Tootsie Rolls
6 green Laffy Taffy
1 small sandwich baggie
toothpick
1 container of white frosting
orange food coloring (I was able to locate Wilton orange food coloring at my local Joann’s craft store in the Wilton section)
Cupcake Directions
#1. Preheat the oven to 350 degrees and grease 12ct. cupcake tin.
#2. In a medium bowl combine the ½ cup of softened butter, 2 eggs, milk, sugar and vinegar. Beat until smooth.
#3. In a separate bowl combine the flour,baking soda, salt and cocoa powder. Mix well and slowly fold the dry ingredients into the wet ingredients stirring until smooth and all lumps are gone.
#4. Pour the batter evenly into the cupcake tin and bake 19-21 minutes. Around 19 minutes insert a clean toothpick into the cupcakes and if it comes out clean they are done.
Allow the cupcakes to cool completely prior to decorating.
Jack-O-Lantern Directions
#1. Add multiple drops of the orange food coloring to the white frosting and mix well. Add more drops depending on how orange you wanted your want your frosting to be. Once you’ve gotten your desired orange generously frost each cupcake. Set them on a plate and place them in the fridge for about 20 minutes after frosting.
#2. Put about 6 oz. of the Wilton black candy melts into a microwave safe dish. Heat in 20 second increments stirring every 20 seconds until melted. This should only take about 2 minutes with 6 oz.
#3. Allow the melted chocolate to cool 3-4 minutes and scoop it into the small sandwich baggie. Make a small snip in the corner of the baggie and gently squeeze the chocolate out onto the cupcakes making 2 small triangle eyes, a triangle nose and a mouth. I used the toothpick to fill in the eyes as needed.
I didn’t get fancy with his mouth but you can do it however you would like.
#4. Repeat with all the cupcakes giving them each a face.
#5. Next take each Tootsie roll and cut in half length-wise. Roll into a stem shape and insert the Tootsie Roll into the top side of the cupcake giving your Jack-O-Lantern a stem. Repeat with all the cupcakes.
#6. Finally, use kitchen scissors to cut each green Laffy Taffy in half. Next, use the scissors to cut a leaf shape out of the Taffy. It doesn’t have to perfect. Trust me. No one will notice if your leaf is a little off.
#7. Using the remaining chocolate in the sandwich baggie, apply some of it on the back of the Taffy leaf and press gently into the cupcake next to the stem. Voila! You have an adorable Jack-O-Lantern cupcake.
#8. Repeat with all the cupcakes.
