Potato Broccoli Soup

I love a good baked potato topped with butter, cheese, bacon and sour cream. Even though it’s spring, some night are chilly and it calls for a creamy bowl of potato soup. Here’s my rendition of this super easy meal that everyone will love! Potato Broccoli Soup – (2 servings)

Ingredients: 4 large potatoes or 6 small potatoes; 3 tbsp butter; 1/2 cup of milk; Broccoli; Shredded cheddar cheese; Sour cream and Bacon.

Directions first peel potatoes then chop into cubes and Boil until tender (10-15 minutes) then drain. Chop up broccoli into small pieces. While the potatoes are draining in the strainer, put the broccoli back in the pot with a little water and steam until tender.

We like our soup slightly chunky so I mash it up but leave some potato chunks. I use a large stainless steel pot that way I only use one pot to boil then put it back in to mash.Stir in butter and milk then salt and pepper to taste.

You can add more milk if you like your soup creamier.Add broccoli and a handful of shredded cheese to the potato soup. We like cheddar cheese but you can use any cheese you prefer. Topped with sour cream, shredded cheese and bacon

Creamy and delicious meal ready in less than 30 minutes and made with only one pot!
