Try making these honey mustard crispy chicken tenders. The great thing about them is that the tenders are not fatty and greasy because they’ve been baked rather than fried. 

Young kids will sure to enjoy them with a healthy side of steamed veggies!

Ingredients

cooking spray
3/4 cup lite honey mustard
2 tsp fresh dill, chopped
4-5 chives (skinny green onions), chopped finely
1 1/2 cups cornflakes crumbs (use food processor or smash in bag for a thicker crumb)
1lb boneless skinless chicken breast tenders
dash of salt and pepper

Directions

Preheat oven to 425°F. Place a wire rack (the kind you use to cool cookies) inside of a cookie sheet, and spray rack with cooking spray.

Combine honey mustard dressing, salt, pepper, dill and scallions in a small bowl. Set aside 1/3 cup of mixture for later.

Place cornflake crumbs in a shallow bowl. Dip chicken into mustard mixture (coating well) and then into cornflake crumbs (coating well), and then place carefully onto the prepared rack. Repeat with all tenders.

Bake chicken for about 15-17 minutes, when it’s no longer pink in the center and crumbs are starting to brown.

Drizzle remaining dressing mixture (the 1/3 cup that was set aside) over chicken breasts and serve.
