Healthy Travel Snack: Customizable Gluten-Free, Nut-Free Granola

Eating healthy while traveling can be a challenge. Daniel and I are always looking for healthy alternatives for Ava, Rose & Ella. Snacks, like granola, can be deceptively unhealthy. Thanks to elevated levels of sugar or mixes packed with allergy-triggering foods, finding a good granola that fits your needs seems like mission impossible. I don’t want to tell you what the kids get like they are stocked up on lots of sugar! Thankfully, we found this healthy travel snack, a customizable gluten-free and nut-free granola recipe.  We always make them before we leave on holiday and pack them for the plane.  The kids love them, they cannot get enough!

So the next time you are off on a family trip or a road trip make sure to whip up a batch of these delicious treats!

Base Ingredients

2 cups of Gluten-Free Old Fashioned Rolled Oats
1/4 cup coconut butter (You can easily find this online, but most retailers will carry it in the baking section or peanut butter aisle.)
2 oz cinnamon applesauce
2 TBSP Vanilla Gluten-Free Protein Powder
1/4 cup pumpkin seeds
1/2 cup coconut chips

Directions

1. Preheat the oven to 350 degrees.
2. Line a large cookie sheet with parchment paper. Don’t be tempted to use foil here!
3. Mix all ingredients until a mixture of clusters are formed.
4. Spread the mixture evenly over your parchment lined sheet.
5. Bake for 10 minutes before mixing and turning the mixture to ensure even baking.
6. Bake for an additional 15 minutes.
7. Removed from oven and allow to cool.

After your mixture has cooled, you can add freeze-dried fruit to further add flavor. Or, this granola is perfect to sprinkle over yogurt. You can also swap out the pumpkin for any of your favorite seeds. Chia and flax seeds are two popular choices. Of course, if you’re not sensitive to nuts pecans or almond slices would also be delicious.

Make sure you store this in airtight containers to maintain freshness. This on-the-go customizable gluten-free and nut-free granola will help keep your protein-focused diet in check and satisfy your sweet-tooth.
