Welcome Back-To-School Notebook Cookies

     

School is back! 

In our household, it was the start of kindergarten this week. Like many moms who have new kindergarteners, this will be the first time my child will be going to school five days a week. Most of her days will be spent away from home and it’s just of a big change for me as it is for my daughter. I plan to spend more quality time with her on the weekends and these notebook cookies are a perfect activity to do together. Not only are they fun to make, but we can also discuss the first days of school during the prep process! 

Ingredients

3/4 cup sugar
3/4 cup or 1 1/2 sticks softened butter
2 1/4 cup all purpose flour
1 teaspoon vanilla 
1 egg
Pinch of salt

Food coloring markers (red, blue, and black)
Decorating bottle 
Pizza cutter
Parchment paper
2 mixing bowls 
Hand mixer 

Directions

1. Preheat your oven to 325 degrees and line a baking sheet or two with parchment paper

2. Lay a piece of parchment paper onto your working surface and spread out a tablespoon of flour 

3. In a large mixing bowl, beat your butter and sugar together until cream

4. Quickly mix in your vanilla and egg

5. Now mix in your flour and salt

6. Form your dough into a large ball and roll out on your floured parchment paper

7. Use a pizza cutter to cut your dough into 2 1/2″ x 3″ rectangles and transfer to your baking sheet

8. Bake for 8-10 minutes and let cool

9. While cooling mix together your icing (see below) 

10. Outline your cookies with your white icing then fill in the inside, using a toothpick to make sure all the empty spaces are covered

11. Let harden for a couple hours, then draw your notebooks lines on your cookies with your food coloring markers 

12. Now draw an “A+” on your cookies with your black food coloring marker 

Icing
1 1/2 cups powdered sugar
2 teaspoons light corn syrup
1/2 teaspoon almond extract 
1 tablespoon milk 

Directions-
1. In a small mixing bowl, combine your powdered sugar, corn syrup, almond extract, and milk


2. Stir until your powdered sugar is completely dissolved 

3. Pour into your decorating bottle
