Zucchini Chocolate Chip Muffins – Chocolate and Vegetables in One Treat

Zucchini Chocolate Chip Muffins Ingredients
1 C. shredded zucchini
1/2 C. sugar
1 large egg
1/2 C. coconut oil
1/4 C. milk
1 tsp vanilla
1 1/2 C. flour
1 tsp. cinnamon
1 tsp. baking soda
1/2 – 3/4 C. chocolate chips

Directions
#1. Preheat the oven to 350 degrees. Spray a 12 count muffin tin with non-stick spray or line with cupcake liners.
#2. Combine the sugar, egg, coconut oil, milk and vanilla mixing well.
#3. Add in the flour, baking soda, cinnamon and shredded zucchini.
#4. Fold in the chocolate chips.
#5. Add the batter to the muffin tins – filling about 2/3 of the way.
#6. Bake for 20-25 minutes. Around 20 minutes, insert a toothpick into the muffins, if it comes out clean they are done. If not, allow to cook a few minutes longer.
