With Easter just around the corner, there is no better time to start planning what to serve after the turkey has been devoured. These delicious Peep Easter cupcakes are the perfect sweet treat for adults and children. Everyone loves a cupcake and the bunny peeps are the perfect festive accompaniment for the holiday.

Cupcake Ingredients

1/2 C. butter, softened to room temperature
1 C. sugar
2 large egg whites
2 tsp. vanilla extract
2 tsp baking powder
1 1/2 C. flour
1/2 tsp. salt
3/4 C. milk

Directions 

Preheat the oven to 375 degrees.

Combine the softened butter, sugar, egg whites and vanilla mixing well. Slowly fold in the flour, salt and baking powder. Lastly, add the milk continuing to stir.

Pour into greased muffin tins (or liners) and bake 20-25 minutes. Insert a toothpick around 20 minutes and if it comes out clean the cupcakes are done.

*Makes approximately 12 cupcakes

Peep Cupcakes  

White frosting
Blue food coloring
pink food coloring
Pink Peeps
Blue Peeps
Bright pink Wilton sugar sprinkles
Bright blue Wilton sugar sprinkles
toothpicks

Peep Cupcake Directions 

Separate the white frosting into 2 different bowls.

Add a few drops of pink food coloring to one bowl of white frosting and mix well. Add a few more drops of pink food coloring depending on how pink you want your frosting.

Add a few drops of the blue food coloring to the other bowl of white frosting and mix well. Same as pink, if you want it bluer add a few more drops of blue at a time mixing well.

Generously frost each cupcake with pink or blue frosting. Sprinkle with the same color sugar crystals.

Insert a toothpick into the base of each Peep pushing it in about 1/2 way.

Finally, insert the Peep into the same color cupcake standing up as shown.

Repeat with the other cupcakes.
