Chocolate Strawberry Banana Ice Cream Cookies
 
Do you have fresh strawberry and over ripe bananas on hand? If so, give making these delicious Chocolate Strawberry Banana Ice Cream Cookies a try! Perfect for hot summer days, these ice cream cookies allow you to indulge a little with the chocolate cookie layers without packing on too many extra calories. There is no sugar added and all the ingredient are fresh. 
 

Ingredients

 
Chocolate Strawberry Banana Ice Cream Cookies
 
5 ripe bananas – cut into slices and frozen*

2 tablespoons unsweetened cocoa powder

3/4 cup chopped fresh strawberries, frozen*

Nabisco Famous Chocolate Wafer Cookies (I find mine in the ice cream topping aisle)

*Slice bananas and chop berries and lay flat on a cookie sheet in the freezer. Freeze for at least 2 hours. Do not put them into a bowl. You will learn the hard way that the fruit sticks to each other and is nearly impossible to process in the food processor when frozen. (Learn from my mistakes!)

In a food processor, add frozen bananas and cocoa. Process until combined and resembles ice cream. Mine didn’t quite resemble ice cream but it was processed smooth and worked fine. Pour into a bowl and stir in berries.

Using my 3 tablespoon scoop, I scooped a dollup of ice cream onto the wafer cookie, and added another cookie on top. You can smooth the sides with a knife if it begins to ooze out. Freeze immediately. icecream-cookies3
 
Makes 10-12 cookies.
