You could say I am sort of a peanuts butter fanatic. To me, peanut butter compliments any dessert from poured over ice-cream to inside baked goods I can’t get enough.
One of my many peanut indulgences are these Banana Peanut Butter Swirl muffins. Made with a banana base and a swirl of peanut butter on top the whole family will enjoy these tasty muffins. The ingredients are inexpensive and the baking process is straightforward.
Don’t forget to enjoy the muffins with a big glass a milk!
1 ½ C. flour
1 tsp. baking soda
½ tsp. salt
1 C. sugar
¼ C. of butter, softened
3 bananas, mashed
1/3 C. peanut butter
12 count muffin tin, greased or 12 Silicone baking cups (optional)
Preheat the oven to 350 degrees.
Combine the flour, baking soda and salt and set aside.
In a separate medium sized bowl mash the bananas. Slowly stir in the sugar, eggs and softened butter. Add mixture to other bowl and combine well.
Pour the mixture into the muffin tins filling them about 2/3 of the way full.
Once all your cups are filled microwave the peanut butter for 10-15 seconds – just long enough to soften. Using a teaspoon, place a scoop of peanut butter directly on top of each muffin (see photo). Repeat with all the muffins. Once they all have a dollop of peanut butter on top – use a butter knife to swirl the peanut butter into the mixture.
Bake for 15-17 minutes until golden brown.
Makes approximately 12 servings (1 muffin = 1 serving)
