Beef Stew Using V8

Looking for an easy and delicious dinner recipe? Well, I have the perfect one for you! Our family LOVES it and it is so simple, delicious and good for you. I throw everything in the crock pot in the morning and by the time we get home, dinner is ready!

Our family loves this recipe because the broth is V8 juice so it has a lot of antioxidant vitamins like A and C. Even if you kids don’t like vegetables, they won’t even know they are drinking it with this recipe! The great thing about this recipe is that you can use fresh, frozen or canned veggies so it is an easy dinner option!

BEEF STEW in a CROCK POT USING V8 RECIPE

First, brown cubed beef in a pan (I usually get beef for stewing)

In the crock pot, put:

–          Cubed beef

–          Peel and cut up potatoes

–          Fresh or frozen carrots

–          Frozen or canned corn

–          Frozen or canned green beans

–          Add V8 Vegetable juice enough to cover all the meat and veggies

–          Add a dash of oregano, ground pepper, salt

–          Optional:  If I have extra time in the morning, I chop up some onions and dice up fresh garlic to add but if you are in a hurry, it will taste just as yummy without it.  If you like the taste but don’t have the time, just add some garlic and/or onion powder. It’s stew so feel free to add your favorite veggies! Sometimes I add celery if we have some in the fridge.

Cook for 6 hours on high or 8 hours on low; either one will make the veggies and meat tender and delicious! Add salt and pepper to taste then voila! Dinner is ready! Eat it with some white or brown rice or even some warm buttered bread!
